Relationship between quality of mushroom (Agaricus bisporus) at harvest and postharvest shelf‑life

Summary:

Relationship between quality characteristics of mushroom at harvest (dry matter, colour, texture and total polyphenols) and postharvest quality (development rate, colour deterioration) and shelf life has been studied in the three flushes of two mushroom crops.
The mushroom firmess at harvest correlates negatively with postharvest development rate and with the decrease of luminosity L (colour deterioration). The firmer mushrooms had a larger shelf life because of slower development and of minor colour deterioration too.
