“Chivo Lechal Malagueño” meat quality as affected by carcass weight

Summary:

The effect of carcass weight on meat quality traits from the quality labels “Calidad Certificada” and “Chivo Lechal Malagueño” has been studied. Basic traits as meat colour or intramuscular fat content were affected by carcass weight. Lighter kids showed less red meat and lower myoglobin and fat content. However moisture, protein and ash contents, water holding capacity and texture were not affected by carcass weight. Finally, although carcass weight affected several individual fatty acids, the indices were not affected.
