Evaluation of morphology, pungency and soluble solid content of the onion ‘Fuentes de Ebro’ The onion ‘Fuentes de Ebro’ is a very important autochthonous variety from the Aragon region characterized by its succulence and low pungency. However, for its adjustment to the actual market demand, it needs to improve the size and pungency uniformity, as well as its conservation capacity. To assessment the actual problem with this variety we have characterized vegetal material from the traditional production area. We have evaluated morphological characters (weight, high and diameter), we have estimated the piruvic acid enzimatically produced, due to the relation to pungency, and we have determined the soluble solid content in ºBrix because of the relation to the conservation capacity. The variability among the different parameters evaluated suggests the necessity to carry out a breeding program with this variety. In fact, we have identified vegetal material suitable to start this breeding. The mass selection seems to be the more adequate method.
